CARROT CAKE COFFEE CAKE

WHAT YOU'LL NEED

2 large carrots
1/2 cup chopped pecans
1/2 cup whole pecans
3/4 cup granulated sugar
1/2 cup butter, melted
2 eggs
1 cup flour
1 tsp baking soda
1 tsp cinnamon
Pinch of salt

Topping:
4 tbsp butter
1/2 cup flour
1/2 cup brown sugar
1 tsp cinnamon
Pinch of salt

HOW YOU'LL MAKE IT

Preheat your over to 350F.

Peel and shred your carrots and set aside.

In a large mixing bowl, whisk your sugar, butter, and eggs. Stir in your carrots and chopped pecans. Add in your flour, baking soda, cinnamon and salt. Mix until combined - your batter will be dense. Set that aside while you make your topping.

Mix together all your topping ingredients until they look similar to a coffee cake topping.

Grease your baking pan or bundt pan, add in your filling, add your topping and sprinkle the cake with your whole pecans.

Bake for 40 minutes or until a toothpick comes out clean.
