JALAPENO CHEDDAR CORNBREAD MUFFINS

WHAT YOU'LL NEED

3 cups all-purpose flour
1 cup yellow cornmeal
¼ cup sugar
2 tbsp baking powder
2 tsp salt
2 cups milk
3 large eggs, beaten
2 sticks unsalted butter, melted
2 ¼ cup sharp cheddar cheese
3 jalapeños + extra for garnish

 

HOW YOU'LL MAKE IT

Start by combining your dry ingredients and whisk. Stir in your wet ingredients carefully to not overmix. Let sit for 20 minutes and preheat your oven to 350°F. Seed and dice 2 of your jalapeños and set aside. Fold in 2 cups of cheddar and your diced and seeded jalapeños to your mixture. Grease your muffin tins and add the mixture, sprinkle on cheddar cheese and a jalapeño ring for garnish. Bake for 25-30 minutes or until a toothpick comes out clean.

Serve with some butter and enjoy them at all of your holiday festivities this year!
