WHAT YOU'LL NEED

1 lb. ground beef, (I prefer 85% lean)
1/3 cup regular oats
1/2 cup pineapple or peach salsa
1/2 tsp. ground cumin
1 ½ tsp. chili powder
1 large egg white
1/4 cup ketchup

 

HOW YOU'LL MAKE IT

Pre-heat oven to 375 degrees F.

I make my meatloaf on a broiling pan to let excess fat drip out, but you can use a loaf pan if you prefer. If using broiling pan, line with foil for easy cleanup.

Place ground meat in large mixing bowl and add oatmeal. Mix well. Add salsa and mix well. Add spices and again, mix well. Feel free to increase the cumin and chili powder if you like your meatloaf with a bit more kick.

Add egg white to meat mixture and mix well.

If using broiling pan, turn meat out onto it and using hands (I cover mine with fold-top plastic sandwich bags to keep them clean), shape into a loaf. “Frost” with ketchup. Bake for 1 hour. Let stand at least five minutes before slicing.

If using loaf pan, pack mixture into pan, top with ketchup and bake for 1 hour - or until done - at your usual meatloaf temperature.

Serves four with perhaps enough leftovers for a meatloaf sandwich or two.
