WHAT YOU'LL NEED

1 pound salmon, skinned
2 garlic cloves
1/2 cup bread crumbs
1/2 cup chopped Mediterranean olives
1/4 cup fresh dill
1/4 cup fresh parsley
1 Tbsp fresh mint
1 Tbsp dried oregano
1oz lemon juice
1-2 Tsp lemon zest
1/2 Tsp sumac (sub extra lemon zest)
Salt and pepper, to taste

HOW YOU'LL MAKE IT

In a bowl, combine your salmon, garlic (minced), dill, parsley, mint, lemon zest and juice, breadcrumbs and seasonings and mix together with your hands until salmon is completely broken apart and mixed thoroughly with your other ingredients. Roll into balls, I believe this made 10. Pop in the air fryer at 375F for about 15 minutes. Enjoy!
