GRILLED SHRIMP SKEWERS WITH CHICKPEA SALAD

WHAT YOU'LL NEED

SHRIMP:
1-2 Tbsp za’atar
1 Tbsp olive oil
Lemon

FOR THE SALAD:
1 can chickpeas
1/2 red onion
2 mini cucumbers
Fresh Parsley
2 Tbsp Greek yogurt
1 Tbsp tahini
1 garlic clove
Lemon
Salt and pepper

HOW YOU'LL MAKE IT

Start by soaking your wooden skewers in water for at least eight hours.

In a bowl, mix together your shrimp, za’atar, and olive oil. Grill your shrimp for about 2-3 minutes per side and set aside.

Dice your cucumber and red onion and mix them with your chickpeas and parsley. Mix together your Greek yogurt, tahini, lemon, minced garlic and salt pepper.

Dress your salad and serve!
