WATERMELON SALAD

This fresh, vibrant side dish is a spring and summer staple and can be prepared in under 15 minutes. Sure to be a hit at your Memorial Day cookout!

WHAT YOU'LL NEED

1/4 cup sugar
1/4 cup water
1 lemon
1 bunch fresh mint
3 cups cubed watermelon
1  cup fresh blueberries
1 cup fresh blackberries

HOW YOU'LL MAKE IT

Dressing:
In small saucepan, bring 1/4 cups of sugar and water to simmer.
Remove from heat.
Add 3 sprigs fresh mint.
Let steep 10 minutes.
Discard mint and add juice and zest of lemon.
Toss with fruit.
Let stand 15 minutes.
Drain fruit.
Top with 1 tsp. chopped mint.
Keep refrigerated until ready to serve. ENJOY!

Variations: Replace lemon with lime and use strawberries instead of watermelon.
